The Wush Wush varietal is a very rare, low yield coffee with its origins in Ethiopia. Like the Gesha, Wush Wush has made the journey to South America, where the unique climate and soil contribute to produce a very unique flavor profile. This particular coffee comes from grower Marcela Castellanos in the Quindio region of Colombia. Using a natural process, Castellanos ferments the cherry in a carbon dioxide rich environment, a process known as carbonic maceration. This fruit-forward coffee has a noticeable sweetness with a heavy body and refreshing citrus acidity.
